2 eggs
1 cup oil
2 cups sugar or sugar substitute
3 teaspoons vanilla extract
3 cup flour
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon salt
1/2 teaspoon baking soda
1/2 cup nuts ( I used chopped walnuts)
2 cup zucchini peeled & grated
1 cup milk
Mix all ingredients well. Bake at 350 for one hour in 8.5 inch loaf pan. Makes one large loaf.
