Easy gourmet Mexican rice

 Goes great with tacos.

For every 2 cups of cooked instant brown rice, stir in 1/2 cup 2% shredded cheddar cheese, 1/4 cup of Thick and Chunky salsa and 2 Tbsp. Light sour cream. ( Usually omit the sour cream.)
